Today was an easy day for dinner. Chicken is fast if you aren’t doing anything fancy. Nothing fancy done to these skinless chicken breasts. Here is how I prepared them (well how Abby prepared it). She washed two huge chicken breasts and dried them. Placing the chicken on a cutting board, she cut them into strips and then cut into cubes. She seasoned with black pepper, poultry seasoning, salt, minced garlic, minced onion, parsley, and marjoram.
Next, place the chicken in the crockpot and add the following: chicken base, butter and frozen peas and carrots. Put on the lid and crank it to high for about 40 minutes. When the chicken is no longer pink, add rice. I used rice in the bag because it’s fast and easy. I hate to admit preparing real rice has been a pain in my backside. I believe in taking shortcuts when available. After adding four bags of rice, add chicken stock or broth, just enough to cover the rice then season lightly again. Let it cook on high for another hour or until the liquid has been absorbed by the rice. Enjoy!
